
- 100g red cabbage
- 100g mangetout
- 1 large carrot
- 1 red pepper
- 125ml natural yogurt
- 2 tablespoons coriander leaves
- 1 teaspoon finely grated orange rind
- freshly ground black pepper
Method
- Prepare vegetables; thinly shred cabbage, thinly slice mangetout and red pepper, peel and grate carrot.
- Toss the vegetables together in a large bowl.
- Chop coriander and grate orange rind, add to yogurt, mix well and season with black pepper.
- Coat vegetables in yogurt dressing and serve.
