• 100g red cabbage
  • 100g mangetout
  • 1 large carrot
  • 1 red pepper
  • 125ml natural yogurt
  • 2 tablespoons coriander leaves
  • 1 teaspoon finely grated orange rind
  • freshly ground black pepper


  • Prepare vegetables; thinly shred cabbage, thinly slice mangetout and red pepper, peel and grate carrot.
  • Toss the vegetables together in a large bowl.
  • Chop coriander and grate orange rind, add to yogurt, mix well and season with black pepper.
  • Coat vegetables in yogurt dressing and serve.
